Chicken Lollipops

Chicken Lollipops

  • 2 boneless, skinless <strong>chicken breast halves</strong>
  • 1 tbsp  <strong>olive oil</strong>
  • 1/2  <strong>lemon</strong>
  • 2 tbsp <strong>barbecue sauce</strong>
  • salt & pepper
  • fat-free <strong>ranch dressing</strong>
  • 1/4 tbsp <strong>chili powder</strong>
  1. Preheat oven to 400’F. Cut 2 boneless, skinless chicken breast halves into 6 equal pieces. In a medium bowl, combine 1 Tbsp olive oil, juice from ½ lemon, 2 Tbsp barbecue sauce, and salt and pepper to taste, then toss with chicken until coated. Marinate for 15 minutes, then bake on a cookie sheet for 15 minutes, turning chicken once at 7 minutes. After the chicken is cooked, spear each piece with a bamboo skewer or lollipop stick (found at crafts stores). Make a dip mixing ¼ fat-free ranch dressing with ¼ tsp chili powder. Enjoy!
